Dining Concept
Jikasei B is an Edomae sushi-ya (a Tokyo-style sushi restaurant) serving omakase meals, where the menu is left to the chef, much like a set menu in fine dining. We serve only seafood, imported three times a week from the top suppliers at Toyosu Market in Tokyo and Omicho Market in Kanazawa.
Signature Dishes
Ankimo no Nitsuke
The most recognizable dish on our menu. Exceptionally large and pristine monkfish liver is flown in from Hokkaido by way of Tokyo, then simmered slowly to a creamy texture, paired with narazuke (winter melon pickled in sake lees) and sandwiched between two monaka waffles.
Ama Ebi
Part of Jikasei since the beginning. Sweet prawns from Kanazawa are cured with kombu seaweed and served raw with pickled green peach and a gelee of tosazu sauce.
Shari
Jikasei's sushi rice is known for its punchy yet balanced flavour that pairs well with fattier fish and dry sake.
Tuna
Sourced from Japan's leading tuna monger, Yamayuki, known for supplying restaurants with tuna that matches their rice.
Kohada
Gizzard shad, the ultimate morsel for sushi lovers. Its intricate preparation demands skill and sense, and the result reveals the style of the chef and restaurant. Ours aims for balance.
